Although the 1 oz portions are sort of convenient, they are too small for baking recipes. 2 oz or 4 oz portions would be better. That being my only complaint, the quality of this chocolate is superior to any other I have tasted. I only bake with Scharffen Berger chocolate bars or unsweetened cocoa and have done so for more that 20 years.

They are very easy to use. I would love to see them in a callet format - similar to either Callebut or Valhrona.
